This week we are making some cookies with pudding mix in them!
These are Jell-O Pudding Oatmeal Cookies!
- 1 1/4 cups unsifted all purpose flour
- 1 tsp baking soda
- 1 cup butter or margarine, softened
- 1/4 cup granulated sugar
- 3/4 cup firmly packed light brown sugar
- 1 pkg (4 serving size) Instant Vanilla Pudding
- 2 eggs
- 3 1/2 cups quick-cooking oats
- 1 cup raisins (optional)
- Mix flour with baking soda.
- Combine butter, the sugars and pudding mix in a large mixer bowl; beat until smooth and creamy. Beat in eggs.
- Gradually add flour mixture; then stir in oats and raisins. (Batter will be stiff.)
- Drop by rounded teaspoonfuls onto ungreased baking sheets, about two inches apart. Bake at 375 degrees for 10-12 minutes.
I can’t lie. I was pretty excited about these. I LOVE oatmeal cookies and I love pudding, so this seemed like a good match to me.
In a sort of sad side note, I didn’t notice that the Chocolate Chip version has a variation for CHOCOLATE pudding until after I started making the oatmeal version. I love oatmeal, but chocolate pudding chocolate chip cookies? Is that even a competition? I might have to retest this recipe soon just to make sure that it is…um…still…good.

They didn’t lie in the recipe. The batter WAS stiff.
And they didn’t spread very much when they were baked. Strangely, even though they were full cooked when they were done, they still tasted like raw cookie dough in the middle. Best of both worlds!

“Good. Very good.”
The Verdict: Very Good
From The Tasting Notes –
These are awesome. Crisp on the outside but soft in the middle. The huge amount of vanilla flavor is interesting. I usually put cinnamon in oatmeal cookies, but these were okay without it. If I were to make these again (which I probably will), I will be adding some cinnamon. They are also addicting. I am pretty sure we ate two dozen of these in one night. Yum.
Oooh, I will have to try these!! I’m thinking the oatmeal ones would be awesome with butterscotch pudding mix instead of vanilla. In fact, I think I’m going to go get ingredients for that RIGHT NOW!!!
Cookies that taste like cookie dough? I am sold! I bet butterscotch pudding could be a good flavour choice too

I have been making these oatmeal and the chocolate chips cookies for 25 years. I found the recipe on the hello pudding boxes. My son’s and everyone I have made them for loved them My son now makes them for his children. Variations: chocolate pudding with white chips. Cranberries in the oatmeal cookie with with white chips. Excellent cookies.
