Since it was Father’s Day yesterday, I decided that I would dip into my stash of 80’s desserts and pull out something that looked good for a change. Just to give Tom a day off on Father’s Day.
Also, I have some crazy recipes coming up, and I don’t want him to go on strike.
Anyway, these are Butterscotch Cheesecake Bars!
- 1 (12 oz) package butterscotch-flavored morsels
- 1/3 cup margarine or butter
- 2 cups graham cracker crumbs
- 1 cup chopped nuts
- 1 (8 oz) package cream cheese, softened
- 1 (14 oz) can Eagle Brand Sweetened Condensed Milk
- 1 tsp vanilla extract
- 1 egg
- Preheat oven to 350 degrees.
- In medium saucepan, melt morsels and margarine; stir in crumbs and nuts. Press half of mixture firmly into the bottom of greased 13×9 baking pan.
- In large mixer bowl, beat cream cheese until fluffy, beat in Eagle Brand, vanilla and egg. Mix well. Pour into prepared pan, top with remaining crumb mixture.
- Bake for 25 to 30 minutes or until toothpick inserted near center comes out clean. Cool to room temperature; chill before cutting into bars. Refrigerate leftovers.
When I saw the recipe for these bars, I actually got really excited. Anytime you get to use a whole bag of butterscotch chips in a recipe, it has to be gold. AND the middle layer was cheesecake? Made with sweetened condensed milk? Score.
These were actually pretty easy to make and came together pretty quickly. Which was good, because smell of butterscotch was overwhelming and it was difficult to keep Tom from taste-testing ahead of schedule.
“Hey, stop!”
“What? I want some of this crust!”
“These are for the blog. You can’t cheat. Put that down.”
“Fine.”
“And that.”
“Crap.”
“AND THAT.”
“Jeez. Do you have eyes in the back of your head?”
But it was all worth it in the end!
“How are they?”
“Sweet. Really, really sweet.”
“Are they bad?”
“No, they are really good. In fact, I feel like we should be having a picnic with corn on the cob, seven layer salad and cheddar and sour cream chips.”
“So they taste like the 80’s?”
“Oh yeah.”
The Verdict: Really Good
From The Tasting Notes –
These were very good, but very sweet. Almost sickeningly so. But they had a good cheesecake flavor, and you could definitely taste the butterscotch chips in the crust and topping. The nuts also gave it a good crunch without being overpowering. And if given the chance we would eat an unhealthy amount of these without blinking an eye.
