 2 packages frozen, chopped broccoli(10 oz. each)
 1 cup baking mix
 1 cup milk
 2 eggs
 ½ tsp salt
 1 cup shredded Cheddar cheese(about 4 oz.)

Heat oven to 325 degrees. Butter 5 1/2-cup souffle dish or 1 1/2-quart casserole. Cook broccoli as directed on package; drain. Beat baking mix, milk, eggs and salt with hand beater until smooth. Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately.
Yield: 6 servings

Corn Puff: Substitute 2 packages (10 oz each) frozen corn for the broccoli.
Spinach Puff: Substitute 2 packages (10 oz. each) frozen chopped spinach for the broccoli.
