 2 ¼ cups all-purpose flour
 2 ½ tsp baking powder
 ½ tsp salt
  cup shortening
 1 cup sugar
 2 eggs
 1 tsp vanilla extract
 1 cup mashed, ripe bananas2 to 3 bananas

Stir together flour, baking powder, and salt. Cream shortening until soft. Gradually beat in sugar until light and fluffy. Beat in eggs and vanilla. Add flour mixture alternately with mashed bananas. Blend well after each addition. Drop-by tablespoon on a un-greased baking sheet. Optional: sprinkle with cinnamon sugar. nuts or coconut, Bake in 375°F oven 12 min. Remove cookies and cool on a rack.
Yield: Makes about 3 dozen cookies
