 ½ lb bacon (about 12 slices)
 ½ lb chopped onion
 ½ cup Bisquick baking mix
 3 eggs
 1 ¼ cups milk
 ¼ tsp salt
  tsp pepper
 ½ cup shredded Cheddar or Swiss cheese

Heat oven to 375 degrees. Great 1 ½ quart round casserole. Cut bacon slices into thirds. Cook and stir bacon into a 10-inch skillet over medium heat until almost crisp. Add onion. Cook stirring frequently until bacon is crisp. Drain. Spread bacon and onion in the bottom of the casserole.

Beat baking mix, eggs, milk, salt and pepper with hand beater until almost smooth. Slowly pour egg mixture over bacon; sprinkling with cheese. Bake uncovered until knife inserted in center comes out clean, about 35 minutes.
Yield: 4 to 6 servings
